Our knife is handcrafted in the famous city of Seki, Japan, using high-performance SG2 powder stainless steel. SG2 steel is unique, produced through powder metallurgy, resulting in a very fine microstructure. This allows the blade to be further hardened without sacrificing toughness.
Heat treated and ice hardened to an impressive 63 Rockwell hardness (HRC), our knife outperforms VG10, AUS10, and similar steels. The stainless clad 3-layer construction further protects the SG2 cutting core and enhances corrosion resistance.
The stunning tsuchime ("hammered") blade finish promotes better food release. The hand-sharpened highly polished edge (12 degrees, even double bevel) ensures razor sharpness right out of the box.
Our fully contoured handle is made of resin-infused wood fibers, offering both comfort and durability. The stainless steel bolster provides perfect balance. The handle is adorned with a traditional Japanese mosaic pin and an embossed Yaxell kanji logo.
This knife features a 9.5" blade length, with a height of 1-7/8". The overall length is 14-5/8". It weighs 8.1 oz. (233g) and is suitable for both right and left-handed use. We recommend hand washing only for best care.
