Our knife is crafted using high-performance SG2 powder stainless steel, exclusively from Japan. Produced through powder metallurgy, SG2 steel offers a very fine microstructure, allowing for further hardening without compromising toughness.
We have heat treated and ice hardened the blade to achieve a high 63 Rockwell hardness rating (HRC). This process not only enhances edge retention but also outperforms other similar stainless steels like VG10 and AUS10.
Our knife features a stainless clad 3-layer construction. This design protects the SG2 cutting core and significantly improves corrosion resistance, ensuring durability and reliability.
The stunning tsuchime ("hammered") blade finish not only adds an aesthetic appeal but also enhances food release. The hand-sharpened edge, ground at 12 degrees with a double bevel, ensures razor sharpness right out of the box.
The fully contoured handle is made of resin-infused wood fibers, providing comfort and durability. The stainless steel bolster ensures proper balance, and the handle is adorned with a traditional Japanese mosaic pin and an embossed Yaxell kanji logo.
