Handcrafted in Seki, Japan, this knife is made from high-performance SG2 powder stainless steel. SG2 steel is unique to Japan and produced using powder metallurgy, providing a very fine microstructure that allows for further hardening without sacrificing toughness.

Heat-treated and ice-hardened, this knife boasts a high 63 Rockwell hardness rating (HRC), offering superior edge retention compared to VG10, AUS10, and other similar stainless steels. Its stainless-clad 3-layer construction protects the SG2 cutting core, enhancing both durability and corrosion resistance.

The tsuchime ("hammered") blade finish not only improves food release but also adds a stunning aesthetic. The hand-sharpened, highly polished edge (12 degrees, with a double bevel) ensures razor-sharpness right out of the box.

The fully contoured handle is made from resin-infused wood fibers, ensuring both comfort and durability. A stainless steel bolster provides balance and stability. Traditional Japanese elements like a mosaic pin and an embossed Yaxell kanji logo complete the design.

Key specifications include an 8" blade length, 1-3/4" blade height, and a total length of 13-1/4". The knife weighs only 7.1 oz (205g) and is suitable for both right and left-handed users. Hand wash is recommended for maintenance.
