Handcrafted in Seki, Japan, this knife features high-performance SG2 powder stainless steel exclusively produced using powder metallurgy. This results in a very fine microstructure, allowing for further hardening without sacrificing toughness.
Heat treated and ice hardened to a high 63 Rockwell hardness rating (HRC), this blade outperforms VG10, AUS10, and other similar stainless steels in terms of edge retention.
Its stunning tsuchime ("hammered") blade finish enhances food release, while the hand-sharpened, highly polished edge (12 degrees, even double bevel) ensures razor-sharpness right out of the box.
Crafted with a fully contoured handle made from resin-infused wood fibers for comfort and durability, this knife features a stainless steel bolster for balance. Adorned with a traditional Japanese mosaic pin and an embossed Yaxell kanji logo, the handle is both stylish and functional.
Measuring 9.5 inches in blade length, 1-7/8 inches in blade height, and 14-5/8 inches in overall length, this knife weighs just 8.1 oz. (233g). It is suitable for both right and left-handed use and should be hand washed only.
