Heat treated and ice hardened to a high 63 Rockwell hardness rating (HRC), this knife outperforms VG10, AUS10, and other similar stainless steels in edge retention.
Featuring a stunning tsuchime ("hammered") blade finish, this knife enhances food release and is complemented by a hand-sharpened, highly polished edge. This ensures razor-sharpness right out of the box. The edge serrations are designed to stay sharp and slice smoothly, even through tough crusts and exteriors.
The handle is fully contoured from resin-infused wood fibers for comfort and durability. A stainless steel bolster provides balance, and the knife is adorned with a traditional Japanese mosaic pin and an embossed Yaxell kanji logo.
