• Heat treated and ice hardened to a high 63 Rockwell hardness rating (HRC) for improved edge retention over VG10, AUS10 and other similar stainless steels; Stainless clad 3-layer construction to protect the SG2 cutting core and enhanced corrosion resistance
• Stunning tsuchime ("hammered") blade finish enhances food release, while the hand-sharpened highly polished edge (12 degrees, even double bevel) ensures razor sharpness right out of the box
