Produced using powder metallurgy, SG2 steel features a very fine microstructure. This characteristic allows SG2 to achieve a high 63 Rockwell hardness rating (HRC) while maintaining toughness, outperforming materials like VG10, AUS10, and others.
Heat-treated and ice-hardened, our blade retains its sharp edge effectively. A stainless clad 3-layer construction protects the SG2 cutting core and enhances corrosion resistance, making it ideal for everyday kitchen use.
The stunning tsuchime ("hammered") blade finish provides excellent food release, while the hand-sharpened highly polished edge (12 degrees, even double bevel) ensures razor-sharpness right out of the box.
Our fully contoured handle, made from resin-infused wood fibers, offers superior comfort and durability. The stainless steel bolster provides superior balance, while traditional Japanese mosaic pins and an embossed Yaxell kanji logo enhance the knife's aesthetic appeal.
